Poor Man's Recipe #10: The Ugly Porkling

The Ugly Porking
Ingredients: 2 green bell peppers, pork and juice in a can, 2 slices of artisan bread, cheese (if desired), lemon juice, ground cumin, garlic powder and rosemary


Slice and dice the green pepper, let it know how much it hurt you.
Heat up the pan and throw the pepper in the fire, show it who's boss! Next open the canned pork swimming in its own juices. Pour all the contents of the can in the pan with the peppers. (Don't worry the pork is already cooked and the juices add great flavor)
Drizzle about a teaspoon of lemon juice. Sprinkle a teaspoon of cumin and two teaspoons of garlic powder. Once the liquid begins to bubble a bit, bring the heat down to just a simmer then sprinkle 3 teaspoons of rosemary then just leave it simmer.
*Note: ignore the peppers' cry for mercy.
In the mean time, take two slices of artisan bread, cut some slices of cheese to cover the base of the bread. Turn the heat off and pour the lovely mixture over the cheese and bread. Make sure you get the juice too because it really makes it yummy.
Now these ingredients (with the exception of the spices) we obtained from a food pantry so  technically this meal was free. Like I said before, work with what you got and if you go to the pantry at the right time, you may just get blessed with workable ingredients. Bon apetit!
